Fun Food Friday 4/21/17

Well, Friday again and another delicious dinner accomplished.  Tonight's dinner was Crockpot Sausage Mac and Cheese and dessert was Butterscotch and Chocolate Chip Brownies.  The boys did not want to be photographed.  That's pretty funny considering their mom is a photographer 😂.  Ollie was not cooperative this evening so I didn't get very many pics of Ava either.       
My mac and cheese is super simple and a hit with the kids.  Recently I had a request for the recipe so I will post it.  

Sausage Mac and Cheese 

1 12 oz. can evaporated milk 
3 cups milk
1/2 stick of butter 
2 cups cheddar cheese 
1 cup Parmesan cheese
1 cup mozzarella cheese or 1/2 block cream cheese (your choice)
1 pound of pasta of choice 
1 tsp salt
1 tsp pepper
1 Tbls Dijon mustard
1/4 tsp paprika
A couple shakes of nutmeg
1 can diced tomatoes with green chilies 
1 pound smoked sausage

Mix all milks and seasonings in a large bowl.  Melt the butter and stir in.  Stir in the mustard and cheeses.  Stir in the pasta (dry), tomatoes and sausage (sliced).  Spray your crockpot and pour in Mac and cheese.  Cook on low for 3 - 3 1/2 hours.  Let me know how it works out for you.  Also if you would like the recipe for the brownies, let me know.  They are super simple.  All for now.

Crockpot Pork Chops

Ok, so I figured I would post how I do my pork chops in the crockpot since I was asked recently, so here it goes. This recipe is great if you really need some comfort food but not a lot of fuss.  I always serve this with rice and green beans, but you could change up the rice for mac and cheese or mashed cauliflower (which we eat a lot of in this house).  The important thing to remember is to brown your pork chops before they go in the crockpot.  I season mine with seasoning salt and pepper and then brown in a sauté pan with a little butter and coconut oil.  You could just as easily use olive oil in place of coconut oil.  Put them in the crockpot and move on to your gravy.  Put 2 Tbls butter in a sauce pan on medium.  When it melts, put in 2 Tbls flour.  Cook that for a few minutes while stirring. You don't want your gravy to taste like flour.  While whisking, pour in 1 cup beef broth and 3/4 cup of milk.  I make more gravy than this usually since I'm feeding so many.  Bring to a boil until it thickens.  Season to taste with a little salt and pepper.  Always taste your food.  Pour over your pork chops and turn in on low.  6-8 hours and you are good.  If  making gravy is not your thing just mix together in a bowl 2 cans of cream of chicken soup and 2 cups of milk with a 1/2 cup sour cream.  I personally don't like using canned soups, too many unnecessary ingredients.  If you have any questions, just let me know.  I would love to know if you make it.  I can also try to help you out of you want to make this low carb.  All for now.

Monday: Chicken and Dumplings (crockpot)
Tuesday: Pork Chops, rice and gravy with green beans (crockpot)
Wednesday: Brown Sugar Bourbon Chicken with broccoli and rice (crockpot)
Thursday: Sausage Mac and Cheese with tomatoes (crockpot)
Friday: Honey Lime Chicken with butternut squash and rice (crockpot)
Saturday: Hot Dog and FF
Sunday: Beef Stew with artisan bread (crockpot)

As you can see, most of my meals right now are crockpot. Super simple.  All for now.

Fun Food Friday 4/14/17

As per request, Fun Food Friday is back.  We never stopped it, but I just got lazy on posting about it.  Tonight's dinner was Chicken Tortilla Soup and our dessert was Chocolate Toffee Crunch.  Super simple meal tonight.  The boys put the soup in the crockpot, and the girls made the cake.  The boys have gotten to the age where they complain about having their picture taken so some of these pics are pretty funny.  We changed our mind on movie selection and went with Guardians of the Galaxy.  I absolutely love the music in that movie.  Good stuff.  If you would like any of my recipes for these meals, just let me know and I will start including them at the bottom.  Some of these recipes are very healthy (like this soup) and some are not (like this dessert 😜).  All for now.

Saying Yes! Part 1

Recently I've been reading a devotional book on radical obedience to God, and it got me thinking about that statement.  Saying yes to God is often, in our society, considered radical.  It was at one point just considered biblical obedience but now goes against the flow of mainstream society.  It got me thinking about the times that I have chosen to say yes to God.  I'm hoping to start this "Thursday Thoughts" to inspire and tell a little of our story of how God has worked in our lives, the part that most do not know.  In our Bible reading this morning, we read in Luke 22: 31-34 it talks about being sifted like wheat.  When you sift flour, you remove unusable parts leaving only the pure and useful flour.  This can be painful when it pertains to our lives.  Obedience to God purifies our selfish nature, our wrong behaviors, and leaves a heart God can use.  The only way to be able to say yes to God is to constantly be in His word.  A relationship with God requires commitment.  You can't say yes if you are not listening and spending time with Him.  I recall a time when, very clearly, called me to send a specific book to someone.  I said yes.  This is a small example but in Matthew 25:21 we know that if we are faithful in small things, God will give us the bigger jobs.  Well, To not make this post ridiculously long, I hope to continue this next week.   I hope you are encouraged.  So, all for now.

Meal Planning

Ok, so recently I decided to jump back into blogging, hopefully not so sporadically. The first topic that was asked about was my meal planning.  As you can probably imagine, with this many people and so many being under 5, it is quite important to have a plan.  I absolutely love to cook, and it has always been a passion for me.  Right now, we are in a season where I don't have the time to spend thinking about meals.  I still cook but it's already planned out so I don't have to think about it. I personally plan my menus one month at a time, but shop weekly according to that menu.  My goal every month will be to post my menu for that month and also every week post our dinners for the week.  Please let me know if this is an interest you have. I would love to be able to share these menus to help you.  All for now.
