In Awe

I’ve never been much for writing. When I say that I mean, putting it out for the world.  There is a certain amount of vulnerability that I have always been unwilling to accept.  I’ve always liked it to stay locked away in the pages of my journal.  No one can judge.  God has called me to tell you this, so I will open the book and show you my heart.  Five years ago I started a journal called my Addison journal.  It was to be my healing journal.  A few days ago, I wrote in the last page.  As I was approaching the end, I had continued mixed emotions.  As I finished, I sat in awe.  It was the longest 2 minutes.  I stared at this book that I didn’t really want to start to begin with, and now it’s like an old friend.  God has brought me so far.  I survived my daughter’s death.  He carried me though, and now I am determined to live my life praising Him.

August 2017 Menu Plan

Another month has come and gone and this one was quite full.  We already started school and this week we start week 2.  Still trying to figure our schedules out.  We're getting there.  Today went really well, and I'm hoping we can keep this momentum going.  The boys were at camp all week last week and we are super excited to have everybody back together.  Since we have started school, our FFF's are going to be based on places.  In August we are Eating our way around the USA.  So without further ado, here is our August Menu plan.  I hope you enjoy and it comes in handy for you.  Let me know if you have any questions.

Curriculum Choices 2017-2018 8th & 6th Grade

I meant to get this post to you earlier, but this week we started school again.  The first week is always a learning curve, especially if you have new curriculum.  I cannot believe I have 2 middle schoolers.  Bryson is a little nervous because as he is now in 8th grade, wait, let me take a minute for that to soak in.  I'm not sure how we got to this point.  I'm gonna go cry in a corner now.  Ok, Bryson is a little nervous because his workload has increased and he's not diggin it.  It's always a struggle continuing to teach not only concepts but time management skills and the responsibility of finishing assignments, even in the evening.  We're pretty blessed considering, when my children disappear to their room, it is not electronics that we find there head buried in, it's a book.  So to get to it.  Bryson is headed into 8th grade this year and this is what we have chosen for him.

8th Grade:

Typing: Typing.com
P.E.: Family Time Fitness and He also works out with James occasionally
Music: Theory Time and Bass Guitar Lessons with Dad

He also participates in some of my sewing and cooking lessons (FFF helps :P).

Gavin is headed into 6th grade this year.  He is always trying to keep up with Bryson.  This is actually why he is only 2 grades behind.  When we first started Kindergarten, he found it too simple so we bumped him up a year, and I'm glad we did because his test scores last year were already high school level in some subjects.  This is what he will be doing this year.

6th Grade:

Bible: Bible Study Guide for All Ages
Typing: Typing.com
P.E.: Family Time Fitness
Greek: Elementary Greek, Koine for Beginners
Music: Theory Time and Electric Guitar Lessons with Dad
Lego Education
Art: Lifepac Art

Curriculum Choices 2017-2018 Pre-K & 3rd Grade

Time gets away from you doesn't it.  I feel like we just started last school year and now we're getting ready to start a new one.  Sometimes my heart is heavy with the thought that my babies are growing up.  Ok, I'm done crying.  This is going to be a series of posts so that it is not crazy long considering we have a lot of homeschooling kiddos.  Our first day of school this year will be on July 17.  We like to start early and have lots of breaks in the school year.  It's always so much better to be able to stop school and pick up and go when daddy is on vacation.  You could almost say that we homeschool year round with about a month and a half around June and July.  This year Luby will be starting Pre-K work.  Technically she is only 3, but she has shown serious interest in doing what everyone else is doing and knows all of her letters, most of her numbers and has asked if she can read so we're gonna jump on that enthusiasm.

For Pre-K, after homeschooling all these kiddos I actually wrote my own Pre-K curriculum so I don't buy anything.  Lots of reading together, fun activities and repetition and games.  I absolutely love Letter Factory: Leap Frog and Talking Words Factory: Leap Frog and Teach Your Child to Read in 100 Easy Lessons.  I've used it with all of my kiddos.

My Pess (although she says she's getting to old to be called that) is going to be in 3rd grade this year. (tear rolling)  Isn't she beautiful.

P.E.: Working out with Mom and Family Time Fitness
Pess also wants to start typing with the boys, but I'm not sure if we're going to add that this year.  Some other things that she will be doing one day a week are:

Music Lessons: she has piano lessons and violin lessons
She has also asked me if she can learn to crochet like me, but I'm not quite sure we're ready for that yet. :P  I think I've covered it all, and now that I've typed it all out, I'm exhausted and I'm not sure I want to start the school year 😅  Luckily for me, I'm blessed with a little girl who loves school and has already started a little of school on her own. Don't hesitate to ask me any questions you may have.  I'll be posting our school schedule as soon as it's finalized.  We always start with a draft schedule and try it out the first week to see if it works for our family.  Thanks for holding on this long.  All for now.

July 2017 Menu

Writing can be quite the struggle in this house.  From homeschooling to managing the home to running the shop, I have to squeeze writing in in the morning after my quiet time with God.  We're in a very busy season with lots of babies and it's beautiful and sometimes hard, but I wouldn't want it any other way.  Sometimes it's hard not to feel alone in this walk, just me and the hubby because most of our friends that are our age stopped having babies a while ago.  So I realize I'm a few days behind, but I wanted to share our menu for July.  I have a menu set in place for the month, but there are times when things get moved around or we will be out of town.  My menu is more guidance and suggestions than concrete set in stone.  Please please ask me any questions.  All for now.

Fun Food Friday 4/21/17

Well, Friday again and another delicious dinner accomplished.  Tonight's dinner was Crockpot Sausage Mac and Cheese and dessert was Butterscotch and Chocolate Chip Brownies.  The boys did not want to be photographed.  That's pretty funny considering their mom is a photographer 😂.  Ollie was not cooperative this evening so I didn't get very many pics of Ava either.       
My mac and cheese is super simple and a hit with the kids.  Recently I had a request for the recipe so I will post it.  

Sausage Mac and Cheese 

1 12 oz. can evaporated milk 
3 cups milk
1/2 stick of butter 
2 cups cheddar cheese 
1 cup Parmesan cheese
1 cup mozzarella cheese or 1/2 block cream cheese (your choice)
1 pound of pasta of choice 
1 tsp salt
1 tsp pepper
1 Tbls Dijon mustard
1/4 tsp paprika
A couple shakes of nutmeg
1 can diced tomatoes with green chilies 
1 pound smoked sausage

Mix all milks and seasonings in a large bowl.  Melt the butter and stir in.  Stir in the mustard and cheeses.  Stir in the pasta (dry), tomatoes and sausage (sliced).  Spray your crockpot and pour in Mac and cheese.  Cook on low for 3 - 3 1/2 hours.  Let me know how it works out for you.  Also if you would like the recipe for the brownies, let me know.  They are super simple.  All for now.

Crockpot Pork Chops

Ok, so I figured I would post how I do my pork chops in the crockpot since I was asked recently, so here it goes. This recipe is great if you really need some comfort food but not a lot of fuss.  I always serve this with rice and green beans, but you could change up the rice for mac and cheese or mashed cauliflower (which we eat a lot of in this house).  The important thing to remember is to brown your pork chops before they go in the crockpot.  I season mine with seasoning salt and pepper and then brown in a sauté pan with a little butter and coconut oil.  You could just as easily use olive oil in place of coconut oil.  Put them in the crockpot and move on to your gravy.  Put 2 Tbls butter in a sauce pan on medium.  When it melts, put in 2 Tbls flour.  Cook that for a few minutes while stirring. You don't want your gravy to taste like flour.  While whisking, pour in 1 cup beef broth and 3/4 cup of milk.  I make more gravy than this usually since I'm feeding so many.  Bring to a boil until it thickens.  Season to taste with a little salt and pepper.  Always taste your food.  Pour over your pork chops and turn in on low.  6-8 hours and you are good.  If  making gravy is not your thing just mix together in a bowl 2 cans of cream of chicken soup and 2 cups of milk with a 1/2 cup sour cream.  I personally don't like using canned soups, too many unnecessary ingredients.  If you have any questions, just let me know.  I would love to know if you make it.  I can also try to help you out of you want to make this low carb.  All for now.

Tuesday: Pork Chops, rice and gravy with green beans (crockpot)
Wednesday: Brown Sugar Bourbon Chicken with broccoli and rice (crockpot)
Thursday: Sausage Mac and Cheese with tomatoes (crockpot)
Friday: Honey Lime Chicken with butternut squash and rice (crockpot)
Saturday: Hot Dog and FF
Sunday: Beef Stew with artisan bread (crockpot)

As you can see, most of my meals right now are crockpot. Super simple.  All for now.

Fun Food Friday 4/14/17

As per request, Fun Food Friday is back.  We never stopped it, but I just got lazy on posting about it.  Tonight's dinner was Chicken Tortilla Soup and our dessert was Chocolate Toffee Crunch.  Super simple meal tonight.  The boys put the soup in the crockpot, and the girls made the cake.  The boys have gotten to the age where they complain about having their picture taken so some of these pics are pretty funny.  We changed our mind on movie selection and went with Guardians of the Galaxy.  I absolutely love the music in that movie.  Good stuff.  If you would like any of my recipes for these meals, just let me know and I will start including them at the bottom.  Some of these recipes are very healthy (like this soup) and some are not (like this dessert 😜).  All for now.

Saying Yes! Part 1

Recently I've been reading a devotional book on radical obedience to God, and it got me thinking about that statement.  Saying yes to God is often, in our society, considered radical.  It was at one point just considered biblical obedience but now goes against the flow of mainstream society.  It got me thinking about the times that I have chosen to say yes to God.  I'm hoping to start this "Thursday Thoughts" to inspire and tell a little of our story of how God has worked in our lives, the part that most do not know.  In our Bible reading this morning, we read in Luke 22: 31-34 it talks about being sifted like wheat.  When you sift flour, you remove unusable parts leaving only the pure and useful flour.  This can be painful when it pertains to our lives.  Obedience to God purifies our selfish nature, our wrong behaviors, and leaves a heart God can use.  The only way to be able to say yes to God is to constantly be in His word.  A relationship with God requires commitment.  You can't say yes if you are not listening and spending time with Him.  I recall a time when, very clearly, called me to send a specific book to someone.  I said yes.  This is a small example but in Matthew 25:21 we know that if we are faithful in small things, God will give us the bigger jobs.  Well, To not make this post ridiculously long, I hope to continue this next week.   I hope you are encouraged.  So, all for now.

Meal Planning

Ok, so recently I decided to jump back into blogging, hopefully not so sporadically. The first topic that was asked about was my meal planning.  As you can probably imagine, with this many people and so many being under 5, it is quite important to have a plan.  I absolutely love to cook, and it has always been a passion for me.  Right now, we are in a season where I don't have the time to spend thinking about meals.  I still cook but it's already planned out so I don't have to think about it. I personally plan my menus one month at a time, but shop weekly according to that menu.  My goal every month will be to post my menu for that month and also every week post our dinners for the week.  Please let me know if this is an interest you have.
